Block B Chardonnay picked a little later, destemmed, settled, and fermented using specialist yeasts in French Oak barrels (30% new). The juice on pressing and settling tasted of rich honey and mead, during ferment grapefruit and citrus flavours predominated. The French Oak barrel (30% new) ferment, with their judicious use, and resting on lees, have complemented this wine with pleasant flavours of white peach, nashi pear, and honey dew melon. The wine has a clear crisp acid line with some lime on the back palate. Serve chilled with a mains of seafood (barramundi, crayfish, abalone, or scallop), Asian dishes, canapes, or platters of soft cheeses, quince paste, dried fruit and nuts. Enjoy today or cellar for even greater pleasure as this wine fills out.
