Hand picked from Black Wallaby Vineyard in Bendigo. 50% tipped direct to SS 1t fermenter & sealed with dry ice for 5 weeks indigenous carbonic ferment with no touch, the remaining 50% de-stemmed to tub with 15% whole bunch & foot stomped daily with wild ferment. Both parcels combined after 1 month and left on skins for another 4 weeks. Pressed to neutral french oak puncheon / hogs heads, topped once per week, 10 months maturing in barrel. Unfined & unfiltered, minimal sulphur at bottling to keep him cellar friendly, no other adds. 5% Viognier added for complexity, vegan friendly.
